question about xmm, mmx, sse(?) instructions

i've been doing some reading about the xmm and mmx, and have read that the registers used for those instructions are large and can perform various instructions on 8 segments of 8 bits of data.

my questions are this. did i read correctly? and i was not able to finish reading before leaving to work. what instructions can be used.
